Lee, founder of Dinewise®

Meet Mr Lee

Experience is knowing where to look.

Dinewise® was built from decades inside hospitality and business — not from a generic consultancy template.

Lee has worked across restaurants, bars, hotels, operations, finance, training and business recovery. The value is not a title or a polished corporate portrait. It is the ability to look at an ordinary scene and notice the money, confidence or opportunity quietly disappearing from it.

That is the thinking behind Shrink Smart™: practical hospitality knowledge organised so owners, managers and teams can see what they have stopped noticing.

Emma, the Dinewise host

Meet Emma

Hi, I’m Emma.

I’m usually the first person you’ll meet at Dinewise. I listen, ask sensible questions, explain what happens next and make sure you never feel as though you are talking to a cold form. And I’m not as young as I look.

I understand busy kitchens, nervous new starters, exhausted managers, guests celebrating something important, suppliers arriving late and owners looking at a bank balance that does not match the work they have put in.

I do not know everything. I will never pretend to be a solicitor, accountant, engineer, food-safety officer or specialist analyst. When something is above my pay grade, I’ll say so and introduce the right person — and I’ll tell you who, why they’re the right person, and what happens next.

“I can help you explore it. I cannot officially approve it.”

What we believe

Listen first

The client’s problem comes before our assessment.

Tell the truth

No smoke, flattery or report written to justify a fee.

Respect knowledge

Value is not always immediately visible on the P&L, but ignorance eventually appears there.

Make it useful

Every question should lead towards understanding or action.

Dinewise® and Shrink Smart™

One brand. One system. Clear roles.

Dinewise® is the parent hospitality management and consulting brand: the experience, judgement and practical support.

Shrink Smart™ is the knowledge-led system for identifying avoidable loss, missed opportunity, weak capability and unrealised potential.

The Knowledge Bank is the structured engine behind both — assessments, audits, observations and operational knowledge connected by business impact.

The specialists behind Mr Lee

I know when to bring someone else in.

When something needs deeper financial, technical, legal or specialist judgement, here is who I introduce — and why.

David

Financial Performance

When your P&L, margins, cash flow or forecasts need a proper review, I pass them to David. That is above my pay grade, and I prefer getting it right.

Maria

Food & Kitchen Performance

Maria understands yield, prep, portions, purchasing and kitchen systems. I can spot the operational clue; she can verify the food-cost detail.

James

People & Culture

James helps with recruitment, retention, leadership and team development. I often hear the concern first; he helps turn it into a sound people plan.

Sophie

Guest Experience

Sophie sees the journey through the guest’s eyes — service, complaints, reviews, loyalty and the small gestures that people remember.

Carlos

Wine & Beverage

Carlos understands bar margins, cellars, suppliers and sales. He strongly dislikes seeing cash trapped on shelves doing nothing.

Michael

Engineering & Energy

Michael takes over when equipment, refrigeration, ventilation, utilities or technical maintenance require more than an everyday operational check.

Priya

POS & Data

I can help you understand what your POS appears to be saying. Priya investigates why the numbers are behaving that way.

Restaurants are where birthdays are celebrated. Hotels are where exhausted travellers finally relax. Cafés are where friendships and first dates begin. Pubs are where old stories are told again.

Behind every plate is a person trying to do a good job. Behind every review is another person who felt something. Behind every P&L is an owner, a team and a great deal of effort.

Kindness is commercially intelligent.

People who feel respected speak earlier, stay longer, recover mistakes more honestly and recommend the business more often. Guests who feel listened to give you a chance to solve a problem before they leave. Staff who feel safe reporting a broken bottle or a bad routine give management better information.

Listening comes before advice.

I do not begin with a lecture. I begin with: “Tell me what happened.” Then I acknowledge what I heard, ask the next useful question and explain why it matters.

We do not confuse kindness with avoiding difficult truths.

Sometimes the kindest answer is the honest one: a control is weak, a routine is wasteful, a manager needs support or a specialist needs to verify the figures. I can be warm without blowing smoke.

This is why listening matters to your bottom line, not just your culture.

Shrinkage rarely announces itself. It is the small thing nobody felt able to mention — the corner someone quietly cut, the control that quietly stopped being checked, the guest who quietly stopped coming back. A business where people feel safe to say something out loud catches that early, while it is still small. A business where they do not carries the same losses for months without anyone naming them. Kindness is not separate from protecting profit. It is usually the first line of defence for it.

“Your success is important to us. That is why I listen before anyone recommends.”
