The many forms of shrinkage

Revenue & opportunity

Empty seats, slow turns, unoffered desserts, missed pairings, weak pricing, poor marketing, unused slow periods and forgotten customer data.

A voided sale looks like nothing happened. Something did.

Where it comes from

This is shrinkage that never shows up as a cost, because it was never spent — it was simply never earned. A table that turns once instead of twice on a busy night, a dessert menu that is never mentioned, a wine pairing nobody suggests, a quiet Tuesday with no plan to fill it. None of it is a mistake exactly. It is revenue that existed and was never captured.

The money issue

An empty seat during service is not a neutral event — it is the meal, the drinks and the tip that table would have generated, gone permanently the moment the opportunity passed. Revenue opportunity is the shrinkage category most owners underestimate, because nothing visibly went wrong. Nothing happened at all, and that is exactly the problem.
