Where it comes from
This is the category that contains all the others. It is not a specific event — it is the accumulated gap between the business you have and the business the same building, the same team and the same guests could actually support, if the small losses on this page were noticed a little earlier and acted on a little more often.
The money issue
Missed potential does not appear as a line on any P&L, which is exactly why it is the largest and least-discussed form of shrinkage in hospitality. It is not a cost. It is the ceiling nobody has tested yet — and finding it is usually less about spending more, and more about noticing what is already quietly being left on the table.
