The many forms of shrinkage

Energy & resources

Heating empty spaces, lighting, refrigeration, extraction, water, laundry, leaks, standby equipment and neglected maintenance.

Heated outdoor space — comfortable for guests, invisible on the bill until it isn't

Where it comes from

Utility spend is one of the easiest costs to stop looking at, because the bill arrives whether or not the spend behind it was necessary. Extraction left running after close, a fridge set two degrees colder than it needs to be, lighting on in a section that has been empty for an hour — none of it looks like an emergency. All of it is a bill you are paying for nothing.

The money issue

Energy costs have risen sharply for most hospitality operators in recent years, which means small inefficiencies that used to be background noise now show up as real money. A single piece of equipment running longer or colder than it needs to, sustained across a year, can quietly add hundreds of euros to a bill with no single event to point to.
