The Profit Leak P&L lines
Sales & Turnover
Checked against covers, spend per head and real capacity, not last year's total.
Where it shows up
Turnover on its own tells you very little. The same number can mean a venue running near capacity at a modest spend per head, or a venue with plenty of empty covers propped up by a few big nights. Profit Leak asks for covers per week and average spend alongside the headline figure, so the same turnover number stops hiding two very different businesses.
Why Profit Leak checks it
Once turnover is set against real capacity, gaps become visible: a quiet Tuesday that never gets addressed, a private-dining function nobody chases, a menu that hasn't tested a price rise in two years. None of that shows up in a P&L that only records what came in — it only shows up once you ask what could have come in.
